8.1 Microbiological Standards

Microbial parameters, maximum limits, and testing methods are defined by regulations based on the specific food category. [1]

8.2 Contaminants and Heavy Metals


Provision, Limits, Testing Methods

Foodstuff/General Food Category

Chemical contaminants parameters and maximum limits are defined by regulations based on the types of food. [2] 
Testing methods: no local standard is available. Other international standards (i.e. ISO testing) methods can be used. 

Heavy metal parameters and maximum limits are defined by regulations based on the types of food. [3] 
Testing methods can refer to local Test Methods: 
  • As: SNI 01-4866-1998 Test method for arsenic contamination in food [4]
  • Pb, Hg, Sn: SNI 01-2896-1998 Test method for metal contamination in food [5] 
  • Pb, Cd: SNI 7853-2013 Testing method for heavy metal levels of lead (Pb) and cadmium (Cd) in meat, eggs, milk, and their preparations using Atomic Absorption Spectrophotometer (SSA). [6]
Other international standards (i.e. ISO testing methods) can be used.

Chemical contaminant:

Type of food: only alcoholic beverages with apple-based ingredients applied for Patulin testing. Maximum limit: 50 ppb 

Testing methods: same as General Food above.


Heavy metal: 

Type of food: Alcoholic Beverages, Including Similar Beverages that are Low in Alcohol. (Bahasa Indonesia: Minuman Beralkohol, Termasuk Minuman Serupa yang Rendah Alkohol). 

Maximum limit: 

  • Arsenic (As, total): 0.10 mg/kg 
  • Lead (Pb): 0.20 mg/kg 
  • Mercury (Hg): 0,03 mg/kg
  • Cadmium (Cd): 0.20 mg/kg 
  • Tin (Sn): depends on the product packaging, can: 100 mg/kg; other packaging: 40 mg/kg 

Testing methods: same as General Food above.

  • Beer: Ochratoxin A: 0.2 g/kg

Pesticide residue parameters and maximum limits are defined by regulations based on the origin of food:
  • Animal origin: SNI 01-6366-2000 on Maximum Residue Limit for Animal – Origin Foodstuff [7]
  • Plant origin: Ministry of Agriculture Decree No. 53 Year 2018 on Safety and Quality of Fresh Agriculture Product [8] 
Other international standards (i.e. ISO testing methods) can be used.
