Definition

According to Resolution N° 216/2004 [1] which provides on Technical Regulation on Good Practices for Food Services, “Prepared foods” are foods handled and prepared in food services, displayed for sale packaged or not, subdivided into three categories:

  1. Cooked foods, kept warm and exposed to consumption;
  2. Cooked foods, kept chilled, frozen, or at room temperature, which may or may not need to be heated before consumption; 
  3. Raw food, kept refrigerated or at room temperature, exposed to consumption.

This also included prepared beverages.
